Description
About The Book
No BS Cloud Kitchen Setup is a practical field manual for first-time food entrepreneurs in India who are ready to move beyond research and actually build a profitable cloud kitchen. Written from first principles and grounded in direct operational experience, the guide covers every stage of the cloud kitchen journey — from unit economics and compliance to aggregator strategy, retention marketing, and crisis management.
India’s cloud kitchen market crossed ₹3,200 crore in 2025 and continues to grow rapidly. Yet nearly 30% of cloud kitchens shut down within their first year — not because the food is bad, but because founders enter the business without understanding its operational and financial realities. This guide exists to close that gap.
Structured across 22 chapters and five sections — Before You Spend a Rupee, Build the Machine, Get Customers, Optimize and Scale, and Survive — the book takes a deliberately action-forcing approach. Every chapter ends with a DO THIS NOW block containing specific, executable tasks. Nineteen printable templates are included, covering everything from a unit economics calculator and compliance checklist to a 90-day execution calendar, weekly P&L tracker, and crisis response scripts.
The guide does not offer motivation or generic advice. It offers the math, systems, and decisions a cloud kitchen founder needs to make before committing capital — and the operational discipline to make those decisions pay off. Priced accessibly to reflect its belief that a founder’s first ₹99 investment should save them from a ₹10 lakh mistake.
About The Author
Abhilash Mohan is an Operations and Workforce Management leader with over ten years of experience building and running complex delivery organizations across India, APAC, the United Kingdom, Germany, and Switzerland. He has held senior roles at World Wide Technology (WWT), IBM Consulting, and Teqfocus, where he led workforce planning, capacity management, performance systems, and delivery operations across engineering organizations, managing hundreds of professionals and multi-million dollar cost bases.
In 2024, Abhilash founded and operated Bengaluru Breads & Chops, a cloud kitchen launched from scratch on Zomato and Swiggy. Over twelve months, he fulfilled over 1,500 orders, maintained a 4.2 Zomato rating, and managed every operational function independently — vendor onboarding, staffing, compliance, menu engineering, platform management, quality control, and digital marketing — without external agency support. The lessons from that experience, combined with a decade of operational systems thinking, form the backbone of this guide.
Abhilash holds a dual Master of Business Administration from THWS Germany and Christ University, Bengaluru, with a thesis on Emotional Intelligence in Leadership Development. He holds dual Distinguished Certifications from Aon in Performance Management and Talent Management, both recognized by SHRM, ATD, and HRCI.
